Maharashtrian Puran Poli Recipe

Puran poli is a famous sweet flatbread that is prepared especially during special occasions like Ganesh Chaturthi, Holi & Diwali. Puran poli is a sweet flatbread consisting of a flavourful blend of lentils, jaggery and ghee.

Puran poli is a traditional Maharashtrian delicacy that is made with refined flour or wheat flour with a filling of cooked Chana dal and jaggery and flavoured with spices like nutmeg and cardamom powder.

In India, there are some dishes that are prepared especially during festivals and special occasions. Puran poli is one of them. 

Puran poli is known by many other names in different parts of India. It is known as Vedmi in Gujarat, Hogle in Karnataka and Oligalu in Tamil Nadu. 

Puran poli is one of the most favourite food items offered to Ganapati Bappa on Ganesh Chaturthi. Apart from modaks & laddoos.

RECIPE OF PURAN POLI

INGREDIENTS

For the dough/outer layer:

  • 250gms  all-purpose flour.
  • A pinch of salt.
  • 2tsp oil for moyan.
  • 2-3tbsp oil to knead the dough.
  • Water to mix the dough as required.

For filling/stuffing:

  • 300gms Chana dal.
  • 275gms grated jaggery
  • 2 cardamom pods were seeded and powdered
  • A tiny pinch of salt
  • 1tbso of ghee

Procedure to make the stuffing for Puran poli:

  • Wash chana dal thoroughly.
  • Soak it in the water for 2-3hours
  • Take a pressure cooker and add 3 times water, the ratio being 3-1, 3 part water and 1 part chana.
  • Cook the chana in the pressure cooker
  • After 4-5 whistles, lower the flame and let it cook for another 5 minutes. 
  • Switch off the flame and let the pressure cooker cool down. 
  • Take the boiled chana in a wok and add grated jaggery into it.
  • Cook the mixture over medium heat.
  • Add in a tablespoon of ghee. This will melt the jaggery, making the consistency of the mixture thin.
  • Keep stirring the mixture continuously until it becomes thick.
  • Add cardamom powder and nutmeg powder to add flavours to the mixture.
  • When the mixture is ready, strain it with the help of a sieve or soup strainer. It is traditionally strained in a Puran strainer or Puran Yantra but you can use a normal strainer as well.
  • After straining the mixture, the stuffing for your Puran poli is ready.

How to make the dough/outer cover for Puran poli:

  • Sift the flour.
  • Add salt to it.
  • Then add oil and mix it well.
  • Now add water in little batches to make it into a smooth dough.
  • Now keep the dough in a bowl, cover it and keep it aside for a couple of hours.
  • After 2 hours, knead the dough for about 5 minutes.

To roll the poli for Puran poli:

  • Make a 2-inch ball of chana dal and jaggery stuffing.
  • Make 1 inch balls of the dough.
  • Always make sure to make the Puran/stuffing double the size of the dough.
  • Roll a small round disc of the kneaded dough with the help of a rolling pin or grease your fingertips with ghee and spread the dough gently to a small round disc.
  • Place the stuffing onto the rolled disc and bring the ends together. 
  • Dust and roll it to make it into a thin chapati. If required, use the flour to roll the poli.

How to cook the poli:

  • Heat the griddle/Tawa, place the rolled poli in the centre and roast both sides over medium heat.
  • Once the brown spots appear, apply ghee on both sides while roasting.
  • Make all the Puran Poli in the same way and store it in an airtight container by placing a kitchen towel underneath.
  • These polis stay fresh for about 4-5days at normal room temperature.
  • Serve this Puran polis with a drizzle of ghee.

Tips to remember:

  • The secret of a soft Puran Poli is in the dough. The outer cover should be soft and thin.
  • The consistency of the dough and the Puran/stuffing should be the same.
  • You can either pat it with your fingertips or roll it like parathas in between two greased polythene sheets.
